Super Soft Souffle Pancakes

MCO = 'main masak-masak' in the kitchen for our in-house teenage chef since she's house-bound and has no where to channel her overflowing energy and creativity.

Sherilyn has now perfected her skills in making sublime souffle pancakes that's uber soft, pillowy, airy and fluffy. They're the best I've tasted thus far. And dishing them out seems to be a no-brainer for her.  The pancakes are so good that I encouraged her to sell them so that people could taste how good her pancakes are but she said it's a tricky business as the pancakes will deflate if they're not eaten immediately.  True that.

Yesterday Sherilyn used up a lot of egg yolks to make orange Frangipane tart and orange custard. Today she utilized the whites to make souffle pancakes.  Several days ago she prepped fresh orange juice agar-agar so that she could make Fresh Orange Fluid Gel to go with the souffle pancakes.  I've never heard of what orange fluid gel is until educated by Sherilyn today  ๐Ÿ˜†. Gosh, it's such a delicate and cumbersome process making it!

The Frangipane tart is still resting in the fridge. Later she'll decorate it with fresh orange slices. Sherilyn wants to try selling the Frangipane tart in a Flash Sale.  I told her that Flash Sale is for selling something at a dirt cheap price and there's no way she could sell slices of Frangipane tarts at a dirt cheap price as she used up my expensive organic almond flour, organic unbleached flour,  kampung eggs and almost 10 oranges to produce the tart! ๐Ÿคจ  Throw in the electricity and water costs and the kitchen wet wipes I used to clean the greasy tops and floor!

Biting into the souffle pancake feels like biting into a pancake cloud as it's oh. so. soft.

Matcha Pancake

Sherilyn got back from her school's cross country event at 1-ish p.m. today and since she had the whole afternoon free before tuition at 8:30 p.m., she whipped up a stack of matcha pancakes as the flour that we bought last year was about to expire.  The matcha powder was bought from Bake With Yen.

As usual, I left everything to her own accord. She found a good recipe online and within an hour, we had some very pillowy and fluffy matcha butter pancakes for tea-time! This time the pancakes are very buttery and creamy as she put melted organic butter and full cream fresh milk into the pancake batter.

Sherilyn layered her pancakes with matcha bread spread and had a scoop of peppermint ice-cream to go with it. She was so stuffed to the gills that she skipped dinner!

She made so much pancakes that we now have a good supply of frozen matcha pancakes in the freezer that we can pop into the toaster anytime that we crave for pancakes.

Homemade Pancakes By The Girls

Someone was craving to eat pancakes since days ago. So she asked Drama Queen if she would like to make some pancakes on Saturday.  Drama Queen couldn't be happier to undertake another masak-masak session in the kitchen!  ๐Ÿ˜‹๐Ÿ˜œ  While Drama Queen was at the tuition center in the morning, the someone googled for some fluffy pancake recipes and got ready the ingredients. Once Drama Queen was back home, the 3 sisters started their pancake-making project without further delay coz someone was super duper hungry ๐Ÿ˜†

This time, the girls got the pancakes right. They were fluffy and pillowy and not burnt. They tasted as good as the ones sold at cafes. Good job girls!! ๐Ÿ’ช

Can you see how pillowy and soft the pancakes are?

Carbo and sugar overload oh gawd!!  Can you see the ice-creams and maple syrup on the table to go with the pancakes? Gawwwwwwd!!!

The girls had great fun and bonding in the kitchen while I sat back and relaxed and surfed the internet on my relaxing Saturday. I can now entrust Drama Queen 80% with supervising her 2 sisters in the kitchen for teeny weeny cooking and baking projects ๐Ÿ˜‰๐Ÿ˜

School Holiday Activity - Making Waffles and Pancakes

This school holiday, the girls have been helping out in the kitchen quite a bit.  They watched how grandma make savoury glutinous rice dumplings (bak chang), helped with making  Chinese dumplings (kau ji) and volunteered to make waffles and pancakes.

For waffles and pancakes, it is the eldest princess who has been bugging me to make them.

Why do I call her a princess?

She does not like any work related to the kitchen and won't even wash her own cup had I not been reprimanding her all the time.  She will always try to find ways to get away with wetting and dirtying her ROYAL HANDS!  She has to thank God for the drama queen for willingly accepting the hardest and most hated chore of all - dish washing. I thank God for my drama queen too for helping me out with this chore that I hate the most.

Since the princess is the one who has been pestering me for months to make waffles and pancakes, I delegated this project to her.  Thankfully she has her 2 side kicks who are always very supportive of her.  Her 2 loyal sisters helped her to google for recipes and to mix the batter. They know their princess sister will fail out right with getting the batter ready, ha!

Below - the girls measuring the ingredients for waffle.

When the batter was ready, we discovered some cracks on the waffle maker, DANG IT!  Cracks on any cooking equipment, plates and cups are a big NO NO.  Bacteria may harbour inside the cracks and as for electrical equipment, electric may stray and we may get electrocuted.

What a bummer!

With the waffle batter, we had to cook it on the pan on stove, turning it into waffle pancake!  And it was yummy, though not as crispy as waffles.

Below - firing on all stoves.  The girls used 2 stoves to flip their waffles and pancakes.

Before the waffle pancakes even touched the plate, they were all walloped by the girls and moi!  We ate them straight from the pan!  But I wasn't worried too much of us getting heaty as I have my Izumio hydrogen water  to zap away the heatiness :D

By the time the last waffle pancake was being flipped on the pan, the girls realized that they could not get enough of them. They wanted more!  So they googled for a pancake recipe as pancake batter does not need fermenting.  I left it all to them to kau tim and only helped with checking on the doneness of the pancake and making sure that the littlest one does not get into trouble in the kitchen.

After 2 hours of sweating buckets in the hot kitchen, we made enough waffle pancakes, banana pancakes and plain pancakes for dinner for everyone, including our dear part-time helper.

Below - pancakes with sliced bananas served with maple syrup and blueberry and cream Haagen Dazs ice-cream.  This is Sherilyn's creation.  I think she's got a lot of talent to excel and soar in the kitchen.  With her outgoing, brash and bubbly personality, she may even make it to the status of celebrity chef one day, ahem!  *syiok sendiri only*  :D :D

Healthy Wholemeal and Rye Flour Pancakes

I made my girls pancakes for lunch again, backed by popular demand! Pancakes are easy to prepare but it is very time consuming. If I don't have a helper to help me sweat it out for an hour at the hot stove, I would not have prepared them.

This time, my pancakes are pretty healthy. I used wholemeal flour, high protein flour, rye flour, ground almond, milk powder, a pinch of sea salt and 4 eggs.

My girls wanted to have their pancakes eaten with Haagen Dazs green tea ice cream, and I gave in. And so they had a sinful, decadent lunch of yummy pancakes with ice cream!

Can you guess who the impatient rascal holding her cutlery was at the background?

Banana Buckwheat Pancake

I made the gals buckwheat pancake again. This time it's with bananas since I had some very ripe bananas at home. Overly ripe bananas would taste really sweet and fragrant when used to bake cakes or pancakes.

I added 3 eggs, 2 huge scoops of Aly and Sher's Dutch Lady 456 milk powder, a 1/4 teaspoon of vanilla essence and a pinch of salt to the batter.

The banana pancake was really scrumptious. Even I liked it. But it looked like chapati / tosei though!

When Alycia came back from school, she couldn't wait to taste the pancake. I told her to keep her dirty hands off the pancake and here's what she did :

How Do You Like To Eat Your Crepe With?

Some people like it with a dribble of honey, some like it with maple syrup, peanut butter, strawberry jam or ice-cream but my gals like to eat their homemade crepe with yoghurt for it tastes just like ice-cream and it's healthier too. I prefer to eat them plain, nothing that's too sweet.

Banana Orange Crepe

As promised, here's the cincai recipe for the banana and orange crepe that I had whipped up :

Ingredients :
1) High protein flour (I use organic unbleached high protein flour)
2) 3 eggs
3) 4 tablespoons of toddlers milk formula (you can use fresh milk or regular milk powder)
4) Water (enough to mix everything into a batter that's not too thick nor thin)
5) 1 tablespoons of wheatgerm
6) 1 tablespoon of poppy seeds
7) 1-2 tablespoons of almond nibs
8) 1 tablespoon of pumpkin seeds
9) 3 ripe bananas - sliced
10) Freshly squeezed orange juice (1 used 1 whole medium sized orange)
11) 1-2 teaspoon of salt
12) Butter

Method :
1) Pour the flour into a large bowl
2) Pour in water and orange juice and mix well - make sure no lumps of flour left
3) Add in the 3 eggs (beaten)
4) Add in the rest of the ingredients
5) Heat up non-stick pan and put in butter
6) Use a ladle and pour out batter into the pan, scoop by scoop and pan fry the crepes under medium fire.

Serving suggestions :
Can either eat plain or eat them with your favorite jams or yohurt. My gals love eating their crepes with strawberry yoghurt (healthy alternative) and sugar-free peanut butter.

Alycia my future chef helping to prepare the batter.

Then she pours in the sliced bananas.

The batter, ready to be pan fried.

My cincai banana orange crepe - a big hit with my 2 kids!

Banana Orange Crepe

This is the banana and orange crepe that I made for lunch a couple of days ago.... all natural and organic ingredients. Though it was cincai (simply) made, it tasted really delicious, I kid you not. You come to my house and I'll make you some to try! I am so glad that Alycia and Sherilyn loved them so much. I made about 10 pieces and they were even enough to be eaten for dinner, yet the gals didn't get fed-up with them. I am going to make another batch of crepes on Saturday and this time, I will add sweet corn kernels, banana and orange. Stay tuned for the cincai recipe....

Alycia Makes Pancakes

Alycia loves eating, playing with her masak-masak (toy cooking set) and anything that has got to do with food. Yesterday she tried her hands at making pancakes for lunch. After I had poured out the wholewheat flour, chocolate milk powder, sesame seeds, poppy seeds, pumpkin seeds, wheatgerm, eggs and water into a large bowl, she helped me mix and stir the batter.

Alycia mixing and stirring the batter.

Fresh from the pan wholesome pancakes for toddlers and mummy too.

Alycia can't wait to taste the pancake that she had helped to make.
