Simple Homemade Comfort Food 🧡

We had a very simple homemade lunch yesterday, made with love and wholesome ingredients. Dad prepared pumpkin soup using a large pumpkin. He first steamed the pumpkin, then blended it into a smooth puree before packing most of it into portions for freezing and future use.

With the remaining puree, he turned it into a comforting soup by adding water, onion and garlic powder, olive oil, pepper, and a little salt. He then added marinated fish fillet and chicken fillet into the soup, and finally tossed in some homegrown moringa leaves for extra nutrition.

I had the soup on its own without carbs, while Mum cooked some quinoa noodles to go along with it. I also love my pumpkin soup topped with some walnuts and a sprinkle of crispy fried garlic for that extra aroma and crunch.

It was such a soothing, nourishing, and nutritious lunch — exactly the kind of healthy homemade food we enjoy most. 🥣🌿
